Yamakoshi is said to be "a village where the original landscape of Japan remains. We are a farmer's inn located in such a
village.
We are proud of the scenery of the terraced rice paddies of Yamakoshi and our creative country cooking using seasonal
vegetables and rice grown in the rich nature.
Please enjoy a relaxing time that you can only experience
here.
○Meal Menu
An example of spring menu
Assorted wild vegetables tempura (udo, butterbur sprouts, kogomi, uroad and koshi-abura)
Seasonal simmered vegetables (royal fern, bamboo shoots and deep-fried tofu)
Sauteed Japanese butterbur
dressed udo with walnut
Kinome (akebi no bud) with egg yolk
Namul (seaweeds) with egg yolk
Sauteed Japanese butterbur sprouts and potatoes with anchovy and garlic
Wasabi greens pickled in soy sauce
Rice grown in terraced rice paddies
○Proud of its soil
The Yamakoshi area gets about 3 meters of snow in winter. Thanks to this snow, soft and fresh wild vegetables can be harvested. The flavor of wild vegetables differs depending on the soil (clay soil, sandy soil, etc.) in which they grow. In the area of Santayu, the clay soil is stronger and more fragrant, and you can feel the spring more.
○Proud of our rice
SanTayu's rice is grown in the terraced rice paddies of
Yamakoshi, a region rich in natural beauty. We use only water and rainwater from the mountains, which are free from
domestic wastewater, and we use as little pesticides as
possible. Because the rice fields are located in the mountains,
the difference in temperature between daytime and nighttime makes the rice even more delicious. It tastes really good,
if I do say so myself!
○Precious cooking method
At Santayu, we serve it the traditional way, of course, but we
also offer it in various arrangements. Vegetables and wild
vegetables are the main ingredients in Santayu's cuisine.
We plan our menu with the hope that our guests will learn
about the possibilities of vegetables and wild vegetables and
the various ways they can be used.
The ingredients available are different depending on the time
of year you visit, and the flavors change as well.
Please come and enjoy the once-in-a-lifetime taste of each
season.

(I thank the family for their friendly and considerate welcome. I really enjoyed the attentions, such as the car rides to discover the rice fields and crops, the fireflies one evening, and our conversations via the phone translator. The meals were the best I have tasted in Japan, with particular flavors. It is also thanks to someone working at the community house in Yamakochi that I found this accommodation (and this site STAY JAPAN). The accommodation is very comfortable, quiet and relaxing. It was a very enriching stay.)
